About summer sausage
« on: September 17, 2011, 04:30:41 PM »
We bought a quarter of beef, and had some processed as summer sausage.  It is a cured sausage, and we find it to be too raw tasting for us.  If I were to cook it, does anyone have any suggestions as to how long/what temp?

If it is the summer sausage I am imagining, there are quite a few things you can do with it. My father used to always fry it up in a pan and eat it on white sandwich bread with mustard.  :P, Not really my thing. You can also cook it first and then throw it in pasta with fresh tomatoes or cook it up and serve it with potatoes. I think summer sausage is a good breakfast meat that you can throw in omelets or just serve along side eggs.  As for how and how long to cook it, we used to always split it in half and cook it on both sides in fry pan. I bet it would be interesting on the grill too. I would treat it like a bratwurst even though it is cured.

I'd just treat it like kielbasa.  Brown it in a frying pan.  It would only take a few minutes.
