What about a paella? You can do one with just shrimp, mussels and veggies, no need for chicken or rabbit.

Black Dephinium, paella ended up coming in a close second!

I ended up going with a scallop gratin - scallops are little expensive, but the dish has the advantage of being prepared ahead and a very quick cooking time.

Thanks for all the suggestions - I will probably use them all as they sound yummy!

Sure, JPCher - from "Vineyard Harvest - a year of good food on martha's vineyard"

Serves 4

a tsp each of chopped thyme and parsley
a grind or two of fresh pepper
2 TBL fresh bread crumbs
2 TBL butter, melted
2 shallots, minced
1.5 lbs bay scallops
1.33 cups heavy cream

(bay scallops are expensive, but this won't work with sea scallops)

Preheat to 400. Butter a 9x12 ceramic baking dish.

In a small bowl, mix together the herbs, pepper, bread crumbs and melted butter. Layer the shallots, scallops, cream, then bread crumb mixture in the dish. Bake for 20 minutes.

Turn on the broiler and move the dish to the 2nd rack from the top. Broil until golden - this is quick, so watch that it doesn't burn!

Voila! Easy!

I am glad you came up with something great to serve your guests. I was on the verge of suggesting that the king get off his heinie and cook the dinner himself since he's the one being so fussy!

What have you got? Is it food? Is it for me? I want it whatever it is!

(What I like about mine is you can't go wrong.  Who's going to complain about too much feta or too much red wine!??!)
