Sure, JPCher - from "Vineyard Harvest - a year of good food on martha's vineyard"
Serves 4
a tsp each of chopped thyme and parsley
a grind or two of fresh pepper
2 TBL fresh bread crumbs
2 TBL butter, melted
2 shallots, minced
1.5 lbs bay scallops
1.33 cups heavy cream
(bay scallops are expensive, but this won't work with sea scallops)
Preheat to 400. Butter a 9x12 ceramic baking dish.
In a small bowl, mix together the herbs, pepper, bread crumbs and melted butter. Layer the shallots, scallops, cream, then bread crumb mixture in the dish. Bake for 20 minutes.
Turn on the broiler and move the dish to the 2nd rack from the top. Broil until golden - this is quick, so watch that it doesn't burn!
Voila! Easy!
