substitution for coconut in granola bars?

What could I substitute for shredded coconut in granola bars? Do I even need to, or could I just omit the ingredient?

What else is in the bar?  I would normally think that you could leave it out unless it is in the recipe to soak up liquid ingredients, even out the sugar/spices, or to make it stickier.

You could probably just up the oatmeal content a little.

I'm with you - who puts shredded coconut in granola bars?  Yuck.   :D
I have CDO.  It is like OCD but with the letters in alphabetical order, as they should be.

i think it's supposed to make them chewier. i would probably omit (assuming it's a small amount)

See, I love coconut and chocolate together (think Almond Joy . . . or is it Mounds?)

After seeing the recipe, I think the coconut is just for taste. I think you'll be fine without it.
