Lemon Supreme Cake
« on: April 17, 2012, 11:03:38 PM »
In another thread I promised I'd post this recipe (my comments in parenthesis)...

This is the most moist lemony cake I have ever eaten.

My Mom's:

Lemon Supreme Cake

1 pkg lemon cake mix (I use Lemon Supreme cake mix)
1 small package lemon jello (3 oz. I think - and not the sugar free)
4 eggs
3/4 cups oil
1 cup cold water

Mix til well blended.  Pour into  9"x13" pan.

Bake at 325 degrees (Fahrenheit) - 45 or 50 minutes.

Punch holes upon removal from oven (I use a long tined fork) pour glaze over top.

Glaze -
7 tbs lemon juice
1 pkg powdered sugar (1 lb)
grated lemon rind (zest of 1 lemon)

Thanks for the reminder.  This is the first cake I made by myself when I was 9, but in a bundt pan. I was thrilled with all the compliments I received from my mom's friends to whom it was served, so it really started my now 40 year love of baking.
