Great for tenderising anything before cooking! It is a wonderful base for a marinade.

Also nice in irish soda bread, or just as a drink.

I was going to suggest the soda bread too. :)

Soda bread is really handy to make in a hurry if you can't be bothered to go to the shops to get bread, and don't want to spend ages waiting for yeasted breads to rise. If you don't have buttermilk, you can use milk and cream of tartar.

Substitute for the water when making a chocolate cake from a mix.  Or find a chocolate cake recipe that calls for buttermilk.

Buttermilk makes excellent cornbread, too.

I keep forgetting you can freeze buttermilk!

I usually try to keep powdered buttermilk on hand for the few baking recipes that use it, but the next time I end up w/ the liquid, I'm going to put the excess in the freezer, premeasured for those recipes!

I make this with buttermilk and it is so good! :)  My friend who's been to Ireland says it tastes just like the brown bread she had there.

You can use buttermilk as a base for homemade yogurt, or even use thick* buttermilk in place of yogurt in some recipes.

*It's my opinion that buttermilk never goes bad; it just keeps getting thicker and tastier. Of course, YMMV.
