Yes, you can freeze the bones the same as any meats. Zip-lock baggie with all the juices, etc. or wrapped up in seran wrap (whatever the bone fits in.)

I froze the bones because I didn't have enough time until the next weekend to make the soup and didn't want it to sit in the fridge for a week. 'Fridge thawed the night before.

I don't make a stock. With the split pea soup I put the bone with the meat on along with the juices in with the peas as they are cooking. Once the peas are close to  done, the cling-on meat is easy to take off the bone.

I've also frozen chicken and turkey bones for making stock later.

POD.  I freeze the hambone because I don't always have the soup stuff on hand, so it may be a while before I make soup.  Or, as happened last time around, I still had about 4 dinner's worth of frozen soup still on hand, so I just froze the bone and will use it when it is convenient.

I also freeze turkey carcasses much of the time, because I really don't want to mess with stockmaking the day after the Feast of St. Turkey or Christmas.  And I freeze chicken bones because there are only two of us, so it takes a while to build up enough bones (and wings) to have enough to make stock.  I just break it all down into pieces and put it in FoodSaver bags until I need it. 

I usually throw whichever bones it is in the fridge the night before and make the stock/soup the next day, though I don't know if there is any reason it couldn't come straight from frozen since I haven't tried it that way.  Just habit to defrost it, I guess.
