I think your menu sounds just fine! I keep going back trying to find anything that's missing, nope.
I even think you're fine on the vegetarian side -- you have cheese, dips/chips vegetable tray, lettuce/tomatoes, bread. Maybe
add something like a hummus (isn't that a protein-based vegetarian spread?)
What sort of bread were you thinking about? I would go with a bakery-bread rather than grocery loafs. Maybe a rye, wheat and sourdough.
(I don't really understand the school cafeteria reference, either.
