This is like a cocktail party?  Or is it a dinner?

We are gathering at a classmates house from 7pm-midnight. I plan to get bread to make sandwiches out of meat and cheese trays. Will have a tray of lettuce, tomatoes and onions. Mayo & mustard

I think it's fine.  Do you need to worry about a vegetarian option?

If you keep the cheese separate from the meat and then grill some zucchini, squash, or other vegetable slices people could make cheese or veggie sandwiches.

I plan to make the cheese and meat on different trays. Do not know about grilling because I will be staying in a motel so have to cook with crockpots and microwave!

Contact the place where your getting the meat and cheese trays and see if they have an option for a veggie sandwich filling.  Or see if they can do a cold vegetarian pasta salad.

What you really need is school cafeteria food.

Before the op goes to the effort and expense for vegetarian
it might be a good Idea to ensure there are vegetarians in the group.

I think your menu sounds just fine! I keep going back trying to find anything that's missing, nope.

I even think you're fine on the vegetarian side -- you have cheese, dips/chips vegetable tray, lettuce/tomatoes, bread. Maybe add something like a hummus (isn't that a protein-based vegetarian spread?)

What sort of bread were you thinking about? I would go with a bakery-bread rather than grocery loafs. Maybe a rye, wheat and sourdough.

(I don't really understand the school cafeteria reference, either. :-\)

I also wondered about a vegetarian option. I agree that you should keep the meat, cheese, and veggies separate. Hummus is a great idea. You could also get some veggie deli slices if you wanted to. If you know for a fact you'll have a few vegetarians, grab a couple of packs of deli slices. Tofurkey makes some good ones.
