A friend gave me a recipe for spinach bean dip the other day, and I made some this afternoon. It's sooo yummy, DH said it was almost as good as guacamole! The original recipe uses a full-size food processor but I just have a mini one and it worked great.
2 C fresh spinach leaves
Can of great northern beans, drained
2 garlic cloves
1 Tbsp olive oil
Juice of 2 lemons
1/2 Tbsp dried dill
S&P to taste
Throw everything in the food processor and blend until smooth. We ate this with tortilla chips. Nom nom nom!
