Breakfast casserole
1 loaf of older bread, torn up
6 eggs
1 cup milk
8 oz shredded cheese of your choice
6 diced breakfast sausages or 1 package of sausage crumbles
salt and pepper to taste
Preheat the oven to 350. Lightly grease a 13 x 9 pan and add the torn up bread as a base. Combine the eggs and milk, and beat until combined. Pour over the bread mixture and then add the sausage crumbles and top with the cheese, sprinkled salt and pepper.
Bake for 30 minutes or until the middle of the casserole is set.
Slice and enjoy! I usually do this for Christmas morning so we can open presents while it's baking.
I think I love you, I have been looking for this recipe for years. They used to make it at the cafeteria where I used to work and no recipe I have found even looked close. thanks!
Slight variation:
13 X 9 pan - spray with Pam
Lay a base of frozen hash browns
fry up Bob Evans sausage (original or flavored)
Beat 1 dozen eggs and add a splash of milk, salt, and pepper
2 cups shredded cheese (or more, can't have too much cheese!)
Put the cook sausage on top of the hash browns
Cover the sausage with the cheese, hold some back
Pour egg mixture over top
Put remaining cheese on top
Bake in 350 degree oven for 1 hour. Let it sit a little before cutting.
I put the casserole together the night before so in the morning all I have to do is put it in the oven. Nice and easy.
(I also make this in an 8 x8 pan, depends upon how many guests we have. I use 8 eggs and cut back on the sausage a little).
