side dishes that are made ahead - bake time question
« on: November 22, 2012, 07:14:13 AM »
I made side dishes ahead - as in assembled them to the point of cooking, and then put them in the fridge.  If they woudl normally bake for an hour, would you do them for 90 minutes since they are coming from the fridge?

Thanks!

Normally I'd cook them for the normal time, unless I'm cooking from frozen, not chilled. (But I'm not the world's greatest cook, so take that under advisement)

I did that with my stuffing; but the recipe also said if you made it ahead, and refrigerated it overnight, take it out and let it stand for 30 mins so it "loses its chill" depending on what your sides are, you might want to do that as well.

30 extra minutes in a hot oven seems too much. I would also worry about uneven cooking - the edges will lose the chill and cook much faster than the center, so you may end up with under cooked center or over cooked edges. Like Siamesecat said, I would remove it from the fridge earlier and let it come to room temperature. If the kitchen is too crowded or too hot, I would set it out in the dining room or another place in the house.

^^^^  Ok - I'll take it out and let it sit a bit before I put it in.  Great idea!  Thank You!!

Pod Mom21Son... I always take out of the fridge and let stand for 30 mins to an hour before putting in the oven.
