Thanks for the explanation, Zilla.  It worked perfectly.  And also, on the creamy sauce with walnuts, this is how I'd had it at restaurants and loved it, but I'm really picky about creamy sauces.  However, I'd forgotten about the walnuts.  So I added them to the butter and sage and it turned out great!  That extra crunch is really yummy from a texture standpoint.

Also, on the marinara, the biggest problem is I just hated the way it tasted.  Frozen red sauce rarely works for me.
