Amazing 4-ingredient Enchilada Sauce

I have been trying for years to make a good red enchilada sauce. I have finally accomplished it!

1 teaspoon olive oil
1 tablespoon good quality chili powder
1 15 oz can tomato sauce
1 tablespoon chipotle chile en adobo sauce or chipotle salsa (found in the ethnic section of most US grocery stores)

Using a medium saucepan, heat oil over medium, add chili powder to bloom in oil for 30 seconds. Add tomato sauce, then chipotle. Reduce heat to a bare simmer. Let simmer 10 minutes, then use to top enchiladas, burritos, or anything else you want. Taste for seasoning, add salt or pepper as needed.

You are welcome. We have made it a few times now. It is also very good to use as a cooking sauce with meat or rice.
