Leftover Shredded Pork Suggestions?

I made a huge batch of shredded pork a couple days ago.  I made it with a dry rub only - half the family does not like barbecue sauce so it's easier to serve it plain with sauce on the side.

There are amost two pounds left over.  I've never done anything with shredded pork except make sandwiches.  Does anyone have a nifty different way to use it up?  I was going to freeze it small batches but thought I'd ask for ideas first.

I just so happen to have a pork butt in the smoker as I type this and anticipating making pulled pork too. I'm told it freezes well, but I would love ideas if I have leftovers tool

Add small amount water or stock to moisten, a bit of lime juice and one or 2 juniper berries per pound- cook in a slow cooker so that the flavors mingle. Serve with cilantro lime rice with a small amount of mild or hot peppers and some beans- add salsas, cheese, and sour cream or guacamole and serve on a tortilla or as tacos or nachos

You could make it into a shredded pork chili.  I make lots of shredded beef to use in various dishes - in the past it has come in handy to add some protein & flavor to pasta and casseroles as well.

Add a little tomato paste, some water and plenty of seasonings to make a light sauce and toss with pasta or gnocchi.

Fried rice, for when you get tired of Mexican and want to change countries.   :)

I freeze pulled pork in sandwich-sized portions, so that I can pull out a sandwich worth at a time.

Make it South American by serving with yellow rice and black beans.

You can also fill pita pockets with the pork, add some cheese and vegetables.

Would be lovely in a soup as well!
