Chocolate Orange Zucchini Cake
2 1/2 cups flour
1/2 cup cocoa
2 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
1 tsp cinnamon
3/4 cup butter
2 cups sugar
3 eggs
2 + 1/2 tsp orange rind
2 tsp vanilla
2 cups grated zucchini
1/2 cup milk
1 cup ground nuts - optional (I don't use them)
3/4 cup icing sugar
1 tbsp orange juice
Combine flour, cocoa, baking powder, baking soda, salt and cinnamon.
In a large bowl combine butter and sugar then beat in eggs. Stir in 2 tsp orange rind, vanilla and zucchini.
Stir in dry ingredients, alternating with milk and nuts. Pour into a greased bundt pan and bake at 350 F for 1 hour.
Combine icing sugar with orange juice and 1/2 tsp orange rind and spread over warm cake. Don't put it on when the cake is too warm or it all runs off. Learned that the last time I made it.
