Do the Google Ads Somehow Track Your Searches?

I have recently been car shopping and a lot of the ads I'm seeing on EHell now are for my local car dealerships, not all of whom I did actually Google.  I also noticed a lot of tax software ads right after I purchased my software on line.

So I'm just curious if it somehow tracks all the searches you did and put the ads up in response to that?
After cleaning out my Dad's house, I have this advice:  If you haven't used it in a year, throw it out!!!!.

I should remember to delete my cookies every once in a while...  but since I'm on a Mac, I don't worry about it too much.
