Banana bread recipes needed

My mother passed away several years ago.  She made great banana bread, but apparently knew her recipe by heart because I haven't been able to find the recipe written down anywhere!

I'm on a search for banana bread recipes to try!

Any help would be appreciated  ;D

Here's mine - it's a really simple recipe.

3 or 4 over-ripe bannanas (smashed)
    3/4 cup sugar
    2 eggs
    2 cups flour
    1 tsp salt
    1 tsp baking soda
    1/2 - 3/4 cup chopped walnuts (optional)
   
    Mix together.  Put in baking pan.  Bake @ 325 for 1 hour

This is our favorite.

Banana-Nut Bread
from Gooseberry Patch Sunday Dinner at Grandma’s

2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup canola oil
2 large eggs, beaten
3 very ripe bananas, mashed (*equals 1 cup or a bit more)
1 cup chopped walnuts or pecans (*I use 1/2 cup pecans; nuts can be omitted)

Preheat oven to 350 degrees.

Combine flour, sugar, baking soda and salt in a bowl; mix well and set aside. In a separate large bowl, mix oil and eggs; add bananas. Add flour mixture and mix well; stir in nuts. Grease bottom only of a 9” X 5” loaf pan; pour batter into pan.

Bake at 350 degrees for 50 minutes. Put loaf pan on a rack to cool for 10 minutes. Remove loaf from pan, put loaf on rack, and continue cooling.

I like to make two batches: one with chocolate chips, then an extra with golden raisins..yummm..

I made a double-batch.  It's very good.  Not quite as dense as my mother's - it has a lighter texture.  My boys think it's awesome.  I don't think it will last past tomorrow  ;D

duhrich - it lasts about two to three days at most in our house.  I was lucky enough to get some nutella in the house to spread on it.  It was heavenly.  :)

I'm glad that your boys liked it!  I'm not sure what to do to make it more dense though.

Try the banana banana bread( that's what it's called ) from all recipes.com or the spiced banana bread from the same site. These are my two go to recipes. Also try using half white and half brown sugar in whatever amount the recipe calls for. Good luck 

I'm not big on coconut, but this is a fantastic recipe.  The coconut is subtle, and the glaze doesn't overpower - it just adds something you never knew was missing from banana bread.

This is mine, from Better Homes and Gardens, circa 1990.

1 3/4 cups all-purpose flour (I have used 1 cup all-purpose, 3/4 cup whole wheat)
2/3 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup mashed ripe banana (2-3 med. bananas)
1/3 cup shortening, margarine or butter (I use oil quite often)
2 tbsp milk
2 eggs
1/4 cup chopped nuts (I often leave these out but if I do put them in, I put in more.  I've also used chocolate chips)

In a large mixing bowl, combine 1 cup of the flour, sugar, baking powder, baking soda and salt.  Add mashed banana, shortening and milk.  Beat with an electric mixer on low speed until blended, then on high speed for 2 minutes.  Add eggs and remaining flour, beat until blended.  Stir in any additions.
Pour batter into a greased 8X4X2 inch loaf pan.  Bake in a 350 degree oven for 55 to 60 minutes or until a toothpick inserted neat the centre comes out clean.  Cool for 10 minutes on a wire rack.  Remove from the pan and cool thoroughly on a wire rack.  Wrap and store overnight before slicing (yeah, like that's going to happen).  Makes 1 loaf.
I have CDO.  It is like OCD but with the letters in alphabetical order, as they should be.

Another delicious option, from Cooking Light. Kids love this one. I use 2 large eggs in place of the egg substitute.

You all are wonderful. Now I'm going to have to buy a bunch of bananas so we don't eat them all and I can make more bread  ;)
