Chocolate Orange Zucchini Cake

Chocolate Orange Zucchini Cake

2 1/2 cups flour
1/2 cup cocoa
2 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
1 tsp cinnamon
3/4 cup butter
2 cups sugar
3 eggs
2 + 1/2 tsp orange rind
2 tsp vanilla
2 cups grated zucchini
1/2 cup milk
1 cup ground nuts - optional (I don't use them)
3/4 cup icing sugar
1 tbsp orange juice

Combine flour, cocoa, baking powder, baking soda, salt and cinnamon.

In a large bowl combine butter and sugar then beat in eggs.  Stir in 2 tsp orange rind, vanilla and zucchini.

Stir in dry ingredients, alternating with milk and nuts.  Pour into a greased bundt pan and bake at 350 F for 1 hour.

Combine icing sugar with orange juice and 1/2 tsp orange rind and spread over warm cake.  Don't put it on when the cake is too warm or it all runs off.  Learned that the last time I made it.   :)

I have CDO.  It is like OCD but with the letters in alphabetical order, as they should be.

For the orange juice, can that be used from the same orange that you get the rind from?  Or does orange rind mean something else?  It sounds yummy and something that I might want to try with almond flour.

Yes, I zest the orange rind and then squeeze out the juice for the orange juice for the glaze.

Awesome!  Thank you for answering so quickly too.  :)  Now I'm going to have to try to make this when I have zucchini in the house again.
