Cinnamon Mocha Cupcakes

Cinnamon Mocha Cupcakes

1 3/4 cups flour
1/2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 cup cocoa
1 1/2 cups sugar
1/2 cup shortening
2/3 cup buttermilk (I use 2 tsp of vinegar, topped up to 2/3 cup with milk, in place of buttermilk)
1/2 cup cooled strong coffee
2 eggs
1 tsp vanilla

Preheat oven to 375 F.

Sift dry ingredients together.  Add shortening, 1/3 cup buttermilk and the coffee.  Beat on medium speed for 2 minutes until batter is well blended and glossy.  Add the other 1/3 cup buttermilk, the eggs and vanilla.  Beat another 2 minutes.

Fill muffin pans 2/3 full.  Bake for 20 minutes.

I found that when I multiplied this recipe by 1.5, it made 2 dozen cupcakes.  If I remember correctly, I iced these with homemade cream cheese frosting.
After cleaning out my Dad's house, I have this advice:  If you haven't used it in a year, throw it out!!!!.
