The only change I made was to add 3 anchovy filets and I think I roasted closer to an hour because I forgot about it. After it cooled a little bit, I whized it in the blender with the 1/2 cup of pasta water instead of using the potato masher as suggested.
To finish it off, I browned half a pound of hot italian sausage in a skillet and then added a cup of fresh green peas and a little water and cooked until the peas were soft to my liking and then continue to brown them till the peas got a little crisp on the outside while the pasta was still cooking.
Tossed the sauce with pasta, plated it and topped with some of the sausage peas and shaved parmesean. It was spicey and fantastic.
I plan to try it with half the butter next time.
