What Herbs or Spices Would You Use With Parsnips?

Parsnips roasted are amazing if you add honey. I also roasted some once with juniper berries after I mistook them for peppercorns - that was a little odd but very, very nice - very fragrant. Sage also goes well and I second the rosemary.

If you don't want to roast them I suggest a generous pinch of curry powder. If you have the time and/or patience, spicy parsnip soup is AMAZING. My recipe uses curry powder, cumin, coriander and cardamom and whatever else spicy I have to hand.
