I agree, tell the person thanks, it looks/smells/whatever lovely, but I can't eat or drink it. Bean dip on the why.

My current pastor has celiac. We now have gluten free communion wafers. On his interview before coming to the church, someone brought and shared a homemade pie. He didn't want to cause waves, so ate the piece he was given. He confessed later that it was a bad idea.

Additionally, we now have trays labeled with nut or no nuts for treats at hospitality times.
