Homemade rice crispy treats and other "bars" might travel well too. As long as they're in ziplocks or something they should stay fresh.

Xena_Xavier, do you have a good eggless banana nut bread recipe? All of mine have eggs.

You can buy powdered egg whites to substitute for eggs.  I have done this with success as well and you can find them in the baking aisle at the grocery store.
