Anyone for leftovers?  Day before yesterday, I roasted a chicken.  Today I cooked pasta, mixed it with cheese, peas, a bit of milk and a cream of mushroom soup.  Added leftover chickekn and topped with melted butter and breadcrumbs.    The chicken carcass is currently being cooked into a happy broth to go into a soup for tomorrow.

Lunch today, though, after leftover black bean soup, I made cinnamon apple.. things.  Turnovers?  Something along those lines.  I put the recipe in my foodie blog.  We have leftovers to reheat after dinner ;D

Willow, you must try Googling it....I've gotten good recipes from there.
I have finally found the bar I can't get thrown out of....

We are having chili tonight. I thought that this sounded good since it is cold and snowy.

I am a vegetarian and so is my husband, so dinner often revolves around tofu, rice, potatoes, fresh veggies, salad.
I cook almost everything from scratch and like casseroles, stir-fries, mashed potatoes, baked squash.
We eat cheese and yogurt, but I stay away from eggs completely, since I am allergic to them.
We are strict: no fish or chicken
I feel that good health has been a benefit: some signs being sickness rare with us, and I went through peri-menopause and menopause with virtually no symptoms.

Monday night now - we are having leftover homemade ham soup and freshly-baked apple cobbler.

If loving Cole's frozen garlic bread is wrong, I don't want to be right....

I had polenta with green salsa, kalamata olives & sundried tomatoes with cheddar cheese melted on top, salad, and green beans with shallots with crumbled hazelnuts on top.  :)

tonight I had shrimp scampi served Cuban-style, with a side of rice and black beans, a green salad with Trader Joe's Balsamic Vinaigrette (which I'm also taking with me for lunch tomorrow), and for dessert, warm Trader Joe's Olde English Toffee Cake (YUM) with whipped cream. :)

Tomorrow night is all-you-can-eat pasta night at Strings Pasta Cafe, so I'm thinking of going there for dinner tomorrow night. I'm sort of in the mood for pasta that I don't have to cook. :)

I put pork chop casserole in the crockpot this morning. Hubby and son will heat up some peas to go with it and dinner will be ready when I get home!
