I had polenta with green salsa, kalamata olives & sundried tomatoes with cheddar cheese melted on top, salad, and green beans with shallots with crumbled hazelnuts on top.  :)

That sounds terrific.

Thanks, it sure tasted good!  Tonight on the menu is baked tofu (I put the recipe on the vegetarian recipe section of this site) rice, and stewed greens.

We bought some organically grown oranges which are as big as grapefruits and we've been munching on them lately, so sweet & juicy.

Last night made a rotisserie chicken with sauteed green beans and white rice.  Tonight?  No idea.  LOL

Wednesday night, and my husband is downtown for a conference. The kids want sandwiches. I was going to have leftover Noodles Romanoff, peas, salad and apple cobbler, but my husband must have eaten the noodles and cobbler for lunch.

I'll still eat the peas and salad, but I guess I'll make some rice or something also.

I decided not to go to Strings, cuz I'm alone and I didn't feel like dining on all-you-can-eat pasta alone.

Instead, I went home, and made myself linguine pasta with shredded parmesan, a little bit of butter, some garlic pepper and ricotta cheese. Yum. :)
