I love the french version of grilled cheese sandwiches.  I think they call them madame croquets or something like that.

I make mine with gruyere or sharp provolone, mozarella and proscuitto.  Saute like normal grilled cheese then topped with a cheesy bechamel sauce and broiled.  Yum!
