ISO the perfect muffin recipe!

it has to be somewhat healthy, and really really delicious. I started making muffins a few weeks ago, and can't find the perfect one. when i make them too healthy (like the one i made with yoghurt, applesauce i/o oil and no eggs) they are icky. the really delicious ones are really unhealthy and i dont want them in the house. so a bit of oil is fine, eggs are fine, yoghurt is fine, etc etc etc

we like spicy ones - i made some two weeks ago that had a lot of spices (all spice, cinamon, cloves). If you have something with grated carrots or cooked pumpkin - that's fine too. i'll sneak some in and DS will never know the difference ::)

so what say thee, ehellions? anyone?

This probably isn't healthy enough, but it's the healthiest I have:

Lemon Yogurt Muffins  (makes 12)

2 cups all purpose flour
2 1/2 ts baking powder
1/2 ts each baking soda and salt
1 tb grated lemon peel
1 egg
1/2 cup oil
1/3 cup honey
8 oz carton lemon yogurt

Preheat oven to 400.  Mix dry ingredients.  Mix egg, oil, honey and yogurt well.  Add to dry ingredients.  Stir till just moistened.  Fill muffin pans 2/3 full.  Bake for 18 minutes or until golden brown.

Actually, Cicero, here's one I forgot about.  And at this time of year, they'd go well with the turkey dinner.  I like them with pork, too.  I think they're (or at least I use them as) more of a dinner muffin than a breakfast muffin.  And if you keep the quick mix in the refrigerator, they're easy to whip up.  There's not a lot of sugar, there's whole wheat flour, powdered milk and nuts for protein, all of which are healthy.

Quick Mix (makes 4-5 cups)

  4 cups flour (2 whole wheat, 2 all purpose)
  1/2 cup powdered milk
  1 1/2 ts salt
  2 tb baking powder
  3/4 cup butter

Stir dry ingredients until well mixed.  Cut in shortening until crumbly.  Store refrigerated in airtight jar.  Use within 2 months.

Cranberry Orange muffins  (makes 12)

  2 cups quick mix
  1/2 cup sugar
  1 tb grated orange rind
  3/4 cup chopped pecans
  1 egg
  1/4 cup orange juice
  1 8 oz can whole cranberry sauce

Preheat oven to 400.  Stir together first 4 ingredients.  Mix egg, juice and cranberry sauce.  Add to dry ingredients and stir just till moistened.  Fill muffin cups 2/3 full.  Bake for 25 minutes or until golden brown.

just want to make sure: that's TWO CUPS OF OIL and THREE CUPS OF HONEY for 12 muffins?? wow. lots of fat and lots of sugars!

Oh Holy Cow!  I'm sorry.  I don't know where my head was when I typed that.

It's ONE HALF cup oil and ONE THIRD cup honey.
