Actually, Cicero, here's one I forgot about. And at this time of year, they'd go well with the turkey dinner. I like them with pork, too. I think they're (or at least I use them as) more of a dinner muffin than a breakfast muffin. And if you keep the quick mix in the refrigerator, they're easy to whip up. There's not a lot of sugar, there's whole wheat flour, powdered milk and nuts for protein, all of which are healthy.
Quick Mix (makes 4-5 cups)
4 cups flour (2 whole wheat, 2 all purpose)
1/2 cup powdered milk
1 1/2 ts salt
2 tb baking powder
3/4 cup butter
Stir dry ingredients until well mixed. Cut in shortening until crumbly. Store refrigerated in airtight jar. Use within 2 months.
Cranberry Orange muffins (makes 12)
2 cups quick mix
1/2 cup sugar
1 tb grated orange rind
3/4 cup chopped pecans
1/4 cup orange juice
1 8 oz can whole cranberry sauce
Preheat oven to 400°. Stir together first 4 ingredients. Mix egg, juice and cranberry sauce. Add to dry ingredients and stir just till moistened. Fill muffin cups 2/3 full. Bake for 25 minutes or until golden brown.
