I'd second the suggestion about leaving the cheese off the potatoes (the garlic too, though it would break my heart). If she's used to bland foods, the whole taste experience may be too much, and she might want to fall back on some simple starches to balance her taste buds.

I agree. I like garlic mashed potatoes, but on holidays I want them plain to balance out some of the other strong flavors. The same with rolls. Nice hot rolls with butter (Keller's is my favorite, but any good butter will do).
