Uhh...I open the cartons of eggs before I buy them. I rarely touch them, but I do this to make sure none of the eggs in the carton are broken. If I find a broken egg, I put the entire package back and look at another. Is this considered rude and disgusting?
You might want to touch them - move them just slightly to make sure none are cracked on the bottom. I learned to do that after finding one had not only cracked, it had dried to the container. Ick!That's how I check eggs too. They may not be cracked on the top, but I've gotten a few that were stuck to the bottom also. So now I open the carton and just make sure they all "wiggle" in their spot, before purchasing.
The only time I'll switch one out is if it's either cracked, where I can see it...and remove it...or if one is much smaller than the others. But to pick and choose an entire "perfect" dozen? No. Definitely not.
