My favourite soup recipe

Soup seems to be a popular demand here, so I thought I would share my favourite soup recipe with you all.

Onion and apple soup

You need:
3 med/large onions, chopped
3 tbsp butter or olive oil (or combination)
1 large apple, peeled, cored and chopped  -- cooking apple or something tangy like braeburn is good.
1 litre stock -- chicken or vegetable (I use stock cubes) -- about 1/2 strength
1/2 teaspoon cinnamon
1 tsp thyme
1/2 cup dry cider (note: in the UK this is alcoholic cider, about 5% strength. I don't know what the equivalent product elsewhere might be, but I guess you could try apple juice)

Melt butter or oil in a large pan. Add onions, and sweat over a medium heat until transparent, stirring. Do not let them brown. Add apple, cinnamon, thyme, stock and cider. Bring back to boiling point and simmer for about 30 minutes, covered.

Allow to cool. If you used fresh thyme, remove the sprigs. Use a blender to puree the soup, leaving about 1/2 cup unpureed to stir through the rest (if you want people to know it was home-made).

Reheat to serve.
