Taco Soup
« on: May 08, 2008, 10:48:34 AM »
1 pound ground beef
1 onion, chopped
1 can pinto beans
1 can kidney beans
1 can corn
*1 can Ro-Tel
*2 cans stewed tomatoes
1 packet taco seasoning
1 packet ranch dressing mix
4 cups water

1. Brown ground beef with onion; drain.

2. Drain pintos, kidneys, corn. Add to meat.

3. Drain tomatoes, Ro-Tel; add to meat. Add dry mixes.

4. Add water.

5. Simmer for however many hours you have before dinner.

*I don't like the texture of stewed tomatoes, so I usually use two cans of Ro-Tel and one of stewies.

Felipe eats this over tortilla chips and puts cheese on it.

(And if you're doing Weight Watchers, use the leanest ground beef you can find, and it's only three points a serving.)

I forgot to add something important: the onion needs to be chopped.

It won't work nearly as well if you chunk a whole onion in the skillet.

I edited the original post to reflect the need to chop.  ;)
