Vegetarian tacos. Again.

Remember the YouTube video, An Engineer's Guide to Cats? In it, he said that cats. like engineers, are happy to eat the same thing day after day after day. Well, I am like that too when it comes to things I love. So I'll probably be eating these for many days to come. Then maybe I'll do my pasta with chicken in my homemade spicy Thai peanut sauce. And eat that for days.

We had edamame, vegetable tempura and fruity sushi.

Tonight is most likely acorn squash, rice and beans.

I'm going to replicate my favorite sandwich joint's Asian Pulled Pork Sandwich.  Ergo, I have a pork loin in the oven, and I'll be modifying some store-bought barbeque sauce in a little while.

Chicken risotto with garlic bread.  We're on a chicken kick at the moment because it's cheap and goes a long way.

I stopped by my favorite taqueria for take out of black beans, rice & guacamole. They sent me home with a bag of chips and several containers of salsa, so I've got a few meals set.

I went to my friend's engagement party at a sushi buffet last night....very yummy! There were all sorts of yummy sushi, and chefs set up to make whatever kind of hibachi style food you wanted.

Tonight DH and I are driving to a town about an hour from us so he can get his next tattoo. I'm not sure what we'll eat. Maybe Subway? It seems that most towns have one of those.
Sell crazy somewhere else, we're all stocked up here.

Mr. Thipu's famous chili.  It's been a rainy, nasty day so this will be perfect.

Taco Bell, then popcorn with one of my fraternity sisters later. We'll be watching a happy movie, either Princess Bride, Monty Python, or Sound of Music.

I made an awesome potato salad (I hate those creamy traditional ones -- this used vinegar, mustard, basil, garlic, onion and oil as the dressing) with green beans and tomatoes, and served it with toasted chickpeas.

Oatmeal cookies and petite syrah for dessert.
