What's for Dinner?

Spicy tuna and salmon rolls! I had an awesome day at work that deserved some celebrating.

I was so pleased with my dinner choices this evening: two homemade salmon patties (mom's recipe; basic but tasty), a side of raw zucchini spaghetti and basil topped with fresh tomatoes and feta, a handful of blackberries, and a tall glass of organic nonfat milk. Umm! Oh, and an hour later I had some black grapes. All organic/chemical-additive free.

Dh's favorite pasta dish - red clam sauce - takes 10 minutes
This is not a dish I would usually like because of all the canned items ... it is really tasty, easy, and cheap.
Couple tablespoons olive oil, 2 cloves chopped garlic.
2 can chopped clams, 1 drained, one not
Frozen tiny shrimp, or really any other seafood you have.
2 can diced tomatoes - 1 drained, on not
parm cheese
oregano
black pepper
red pepper flakes
2 TBSP tomato paste ( I cheat and use a splat of ketchup )
Basil
Sautee up garlic in olive oil ( chopped onion goes well here if you like ) , add all other ingredients ( spices etc. are to taste ) simmer about 15 minutes.
We like to serve with some frozen peas added in.
Its obviously a pantry type dish - but we even serve it company with fresh pasta and it is always a hit... t odress it up - throw in some olives , a piece of fresh tuna or even a few steamed clams in the shells.
