We have a banquet to attend tonight, but I planned our menu for St. Patrick's Day. Bridies, Colcannon, whole wheat soda bread, and Guinness chocolate cupcakes with Bailey's Irish cream frosting.

Pork chops cooked in the crock pot in root beer, creamed spinach, and some other side that I haven't decided on yet. Something kid-friendly since I'm sure they won't eat either of those things.

This evening I was going to have kale soup and ribs from the bbq place but my famished lazy woman kicked in and I couldn't wait for the soup and didn't want to do the work.  Instead I had lemon hummus mixed with some yogurt as a dip for little carrots and daikon radish sticks and some lite sausage cut into half moons and sauted with some spinach.

The hummus is a commercial product which I really like but for some reason found it too salty this time so I added the yogurt, maybe 2 parts yogurt to 1 part hummus.  I now have a great dip to make for family dinners.  I like the mixture better than the straight stuff.   :)

Last night was some falafel pitas. I made the unfortunate mistake of trying to fry them in canola oil mixed with coconut oil—not recommended! I guess they don't play nice together.  :-[

The boys are probably having egg and cheese sandwiches (one will have ham, one won't) with some sort of fruit. I'm not sure what I'm doing yet. YDS has a school concert tonight, so I'm thinking I'll make a zucchini crust pizza afterward, even though I'm a bit light on topping choices right now.

Tonight:  veggie wrap (vegetarian "chicken" strips + romaine lettuce + an anchovy-free Caesar dressing in a whole-wheat tortilla) and a piece of fruit.

chicken pot pie, with blueberry pie for dessert because it's pi day (3.14). DH even asked me to make him a pie for work. Apparently in 2015 they're going to have a big blow out because it will be 3.1415

I baked sliced potatoes with onion, tomato, black beans and spinach and "taco seasoning." Served with salsa and nutritional yeast.

Fiance said it tasted like a "peasant's meal" or something from our favorite vegetarian restaurant so I think that's good.
