We had some really good Chinese food.  General's Chicken, Beef & onions 7 fried rice.

I created a potato-leek-asparagus soup that wasn't as vibrant as it should have been -- I thought I could get away with water instead of broth, but it didn't quite sparkle like my soups usually do.

Last night, refried beans with tomatoes and green chilies in tacos, and cilantro-lemon rice.

Black beans with chard and salsa eaten with some broken up tostadas and a side of what I call Mexican slaw.

Tonight ended up being an amazing stir fry with cabbage, carrots & onions and a few shrimp (one of my brief forays into eating any kind of meat).

I added peas and chickpeas to the aforementioned asparagus-potato-leek soup, along with some chili flakes. It worked out nicely and stretched the soup to a seventh serving. We also had mushroom couscous.

Tonight will be a special dinner, as it is our last family meal until 3/30.

Loaded smashed potatoes, seared pork chops, mustard-braised cabbage, and salad.

Indian food tonight to celebrate my not having cancer after a recent scare:

Vegetable masala, samosa chaat (samosas with spiced garbanzo beans), naan, and a mango lassi  8)

Last night, my wonderful DH made braised dandelion greens, cubed steak, mashed potatoes and gravy.

After we get back from the gym tonight, I think we will have green chicken enchiladas.

This is the last night that my mom is here (she's been here for three weeks, and I haven't eaten this well in years) so she is making chicken tamale pie and salad, and putting the rest of the cooked chicken in the freezer for me so I'll have enough for a few additional meals for DH and I after she leaves.

We ended up going out and I had two ginormous meatballs with marinara and ricotta, served with fresh rosemary focaccia. We shared an enormous salad and brick oven wings. DH had a roast beef sandwich.

I have class tonight, so I think I will get a sub to eat just before.
