A 5 lb rack of ribs! Homemade coleslaw, macaroni and cheese and a little green salad with tomato and cucumber. Chocolate cake with raspberry whipped cream and strawberries for dessert.

Awesome surprise Valentine's dinner for my husband at a nice tapas restaurant: gazpacho, pesto and eggplant flatbread, couscous with zucchini and amazing dressing,  and marinated portobellos with manchego, greens and bread with red pepper sauce. And sangria.

I'm trying a new recipe tonight which is chicken, sweet potatoes and red peppers roasted in a honey mustard dressing. Fingers crossed!

I made asparagus tossed in olive oil with some seasoning, and salmon with a spicy brown sugar crust.  It was extremely tasty :)

I grilled tofu strips with balsamic, sage and cumin. Lunch was tofu over spinach, apple, grapefruit,  and strawberry salad. Dinner was the rest of the tofu with steamed broccoli.

I have some salmon in the oven already, since I'm planning to bring a salmon Cobb salad to work tonight. I'm super excited!
