Turning the leftover taco meat into taco salad, similar to the way my mom always made it.
Green leaf lettuce
Warm taco meat
Diced tomato
Diced yellow bell pepper
Diced avocado
Finely chopped onion
Kraft Catalina salad dressing
Fritos
Cheese and sour cream on the side

DH is racing tonight and we've invited a bunch of friends over to our trailer to have a BBQ. Hot dogs, hamburgers, veggie platter, chips and watermelon.

We had a big breakfast and a late lunch, so just spinach dip, hummus and cheese with crackers and fruit.

Pulled pork and brisket smoked this morning, red skin potato salad and potato rolls. Birthday cake for dessert.

The recipe was called Eggplant and Coconut Spiked with Chili. Slightly modified,  and served over curried couscous.

Himmel und Erde? Is that like the Dutch Hemel en aarde, a potato and apple mesh?

Himmel und Erde? Is that like the Dutch Hemel en aarde, a potato and apple mesh?

Yes, it's potatoes and apples - also bacon!  It is also delicious.

Pulled pork, brisket, burnt ends and brats. Potato salad, corn on the cob, potato buns, cucumber-tomato-red onion salad. The rest of the birthday cake and I might make something else.
