I made a Mediterrean style salad. Leftover quinoa, shredded chicken, cherry tomatoes, diced cucumber, sweet red pepper, artichoke hearts, kalamata olives, feta cheese, basil. The dressing was lemon juice and the seasoned olive oil in which the artichokes were packed.

Everyone positvely inhaled it!

Beef short ribs braised in pinot noir, broth, garlic cloves, and onion. Served over egg noodles.

Tonight will be skirt steak, fajita vegetables, and avocado. DS will have rice, we'll have cauliflower rice.

Tonight will probably be the same as yesterday- Sue Ann's Noodles. Egg noodles with cottage cheese, butter, and poppy seeds. Excellent for post dental work and other crises.

Doing mass meal prep today, which involves beef roast, pork chops, chicken thighs, and a vegetable roast of zucchini, cauliflower, mushrooms, peppers, and onions. Also making a jalapeno cheese sauce for the pork and chicken.
