I made enchiladas filled with refried and black beans and onions, topped with (canned, yipes) red sauce. So easy, and BF was thrilled.

Last night was some delicious borscht with extra bacon, tonight will be some american chop suey... mmm... comfort food...

It's been DH's week to cook, and we've had a lot more takeout than home cooked meals. We're supposed to be cutting back on that.

I have already planned out my menu for next week, and I'm excited to get started. First up is baked macaroni and cheese, with a big green salad.

Roasted chicken thigh and roasted broccoli alfredo, served over spaghetti squash. I'll cut the kids some slack and make them penne and maybe garlic toast.

Tonight is going to be linguine w/ homemade meatballs & sauce. I'll probably throw together a salad as well since I have a loads of campari tomatoes and spring mix, assuming I remember to take my salad dressing out of the fridge early enough that it isn't partly solid this time around.  :-[

Hot pretzel from the mall then assorted snacks from Costco. My nutrition has not been its best this week.

We attended a surprise wedding with hot dogs (and a fire, when the tabletop grill set the tabletop aflame!). We don't eat hot dogs, but I brought the cake and sparkling wine, so we ate that.

We got Indian takeout on the way home, so channa masala and vindaloo potatoes or some such were the order of the day.

I'm throwing a party tonight, so lots of nibbles, especially a nacho bar, jalapeno/cheese pastry things & sweet potato empanadas. Oh yeah, and caramel cake. Mmm, caramel cake.
