What's for Dinner?

I have leftover spaghetti squash gratin, but I have no idea as to what would go with it.

I was entering recipes for a cookbook project and remembered my warm kale and sunchoke salad, which I topped tonight with smoked salmon and lemon dressing.

Tonight was some mediocre pizza  and wings, but tomorrow is jambalaya night! Which is my favorite of all nights. I make it with hot links and shrimp, and it's amazing. I would eat it every day if I could.

I make jambalaya without prawns/shrimp. Got my caserole in the oven. Didn't follow the recipe strictly,

I've been eating something small every few hours this afternoon: not intentionally, but simply because I haven't had time to sit down and eat a complete meal. At 3 I had leftover kale and sunchokes, at 4, a protein bar, at 6 a brownie, now at 9, leftover spaghetti squash and a glass of wine.

Tuna noodle casserole with dillweed. It's something I adapted from a Gooseberry Patch cookbook.

Beef Stroganoff ( the quick easy version with ground sirloin) with cole slaw, roasted grape tomatoes, focaccia bread and a quick pickle/salad of sliced baby cucumbers, grape tomatoes, sliced onions and a  rice vinegar/sugar/salt/pepper dressing.

Tonight is shrimp scampi (they had those Campbell's starter sauce packet things on sale, so we're trying that) over linguine, with salad and some yummy garlic bread.

Shrimp here, too.  With spaghetti and steamed broccoli, celery, and carrots.

The rest of a roasted chicken and wild rice/quinoa mix.  Veggies undetermined

Cheesy mashed potatoes, sauteed veggies and soy sausage.

Black beans and green beans with garlic and cumin, and rotini with marinara. Red velvet cake with coconut for dessert.
