I had a series of university sponsored events today, so I've snacked on cheese, fruit and cookies all day.

Baked tofu over corn, peas, tomatoes, and onions, seasoned with salsa, garlic and taco seasoning. Served with corn chips and Sauvignon blanc.

DS wanted Japanese hibachi, so that is what we had. Chicken, shrimp, steak, salad, soup, rice, vegetables. We also shared a sushi platter and DH got Tuna Tataki as an appetizer.

Brats, kraut, baked beans and a bottle or two of good beer.  The weather here is more like March than May but it seemed like a good way to celebrate the holiday.  For dessert we'll be having Tahitian vanilla gelato with fresh blueberries. Simple and tasty.  What's not to like?

Delicious.  It's sushi-grade tuna lightly seared on the outside.

Mediterranean chicken salad.  So good!  It had diced chicken, couscous, lemon, artichoke hearts, feta cheese, Kalamata olives, basil, and cherry tomatoes.

Baby spinach topped with smoked salmon and good local olive oil. So simple and so delicious!
