I had left over chorizo sausage, so I made a black bean chorizo sausage soup with onions, bell pepper, and fire roasted tomatoes.

I had left over chicken pesto that was very tomatoey and not very pestoey.  I'm pretty sure it was like 5 million calories, so I need to go for an extra long walk/run tomorrow

Not dinner, but I'm pretty proud of the baked oatmeal with roasted pears that I made for my breakfasts this week. It's amazing when drizzled with a little almond butter.

Slow cooker beef roast with potatoes, onions, carrots & mushrooms. Just one more reason I love fall!

Last night: slow roasted potatoes, carrots, purple onion and kidney beans with chopped garlic, oregano and cumin.

Tonight, probably just free happy hour snacks. My school paid for a big, late lunch of mango fried rice with tofu and vegetables, and an iced tea company was doing a promotion outside the school, so I got some iced tea lemonade.
