Tricolor penne with marinara, chicken sausage, and covered with cheese and baked. Also a green salad and sauteed squash and onions.

Probably carrot soup. Maybe I got a little over-excited in Costco and came home with a 10 lb bag of carrots.

I just wanted to come back and say the soup was ah-maz-ing and used up 3 pounds of carrots. I might make a second batch tomorrow and freeze it.

What's Cavatini?

It's an Italian casserole. Cook some bulk sausage with a diced onion and bell pepper, combine with spaghetti sauce and cooked pasta (three cups dry pasta) and mushrooms if you like, pour into greased casserole dish and top with shredded mozzarella cheese. Bake at 325 degrees for about 25 minutes.

Well I figured out what I had a craving for last night.

I ate a can of corn.

No, I am not pregnant and having weird cravings, and yes, I realize that I am weird.  But it was really  good!  ;D

Tonight we're having tilapia (baked in foil with garlic, butter, onion slices and lemon slices) and a side of rice with cheddar and brocolli.

Ended up with chicken fried steak and mashed potatoes last night.

Tonight is spaghetti with meat sauce, salad, and bruschetta with sun dried tomato pesto and Parmesan.
