1 10-12" skillet, preferably cast iron
Place 1 tablespoon vegetable oil in skillet, place in oven and preheat to 450 degrees F
1-1/2 cups cornmeal, yellow or white
1/2 cup all purpose flour
1/2 tsp salt
2 teaspoons baking soda
1 egg, beaten
1-1/3 cups milk or buttermilk
1/4 cup vegetable oil or bacon fat
1/4 lb raw bacon, cut small and cooked until crisp
1/2 cup scallions, whites and light green parts sliced fine and cooked in bacon fat for 1-2 minutes to soften slightly
Beat egg, add milk and oil. Slowly whisk in dry ingredients until well mixed. Fold in scallions and bacon. Pour into hot skillet carefully, scrape all batter using spatula.
Bake at 450 for 15-20 minutes until golden brown and crusty.
