Going out for our 16th anniversary!  :-*

Happy anniversary!

A friend just returned from a year doing field research in a foreign country and her first request was Mexican food, so we had a homemade Mexican food potluck. I ate so much chips and salsa that I only managed room for salad and cookies for my "real" food.

I made chili tonight, had two bowls. No one in my family likes it, so I haven't made it in over 20 years. Was it good!

Thank you all, we had a great time.

This week, as it is finally starting to feel like fall, I will be making chili, beef & barley soup, and cheese steak subs. I haven't had any of those in a long time.

Tofu marinated in tamari, sriracha and sesame oil with spices, green beans, and brown rice.

Sriracha and garlic marinated chicken strips.

I apparently get amibitious when I'm home alone.  :P

I love Sriracha...I also love garlic....I really like chicken too.  Maybe I should make some of these myself :)

We finally got a hint of fall here yesterday so my DS laughed when he saw me break out the chili pot Made bison chili for a change and experimented with 5 kinds of chili powders.

Tonight is grilled chicken stuffed with feta and sundried tomatoes with fresh green beans.

Ended up going out for a late lunch yesterday, so just had smoked ham and smoked provolone sandwiches for dinner. Tonight is the chili and cornbread, perhaps a dessert.

I will post the cornbread recipe. I am thrilled to be cooking an all cast-iron cookware dinner!

Diced potatoes and red onions cooked up and combined with leftover stewed lentils and some spinach.

Last night I made the big salad mentioned in my 'jazz up my salad' thread, plus we had quiche, Guinness-cayenne-cocoa cupcakes, chocolate chip cookies half-dipped in melted chocolate, cheddar biscuits and chimichurri with garlic bread. Weird potluck!!

Bacon-Scallion Cornbread

1 10-12" skillet, preferably cast iron
Place 1 tablespoon vegetable oil in skillet, place in oven and preheat to 450 degrees F

1-1/2 cups cornmeal, yellow or white
1/2 cup all purpose flour
1/2 tsp salt
2 teaspoons baking soda
1 egg, beaten
1-1/3 cups milk or buttermilk
1/4 cup vegetable oil or bacon fat
1/4 lb raw bacon, cut small and cooked until crisp
1/2 cup scallions, whites and light green parts sliced fine and cooked in bacon fat for 1-2 minutes to soften slightly

Beat egg, add milk and oil. Slowly whisk in dry ingredients until well mixed. Fold in scallions and bacon. Pour into hot skillet carefully, scrape all batter using spatula.

Bake at 450 for 15-20 minutes until golden brown and crusty.

As long as you have a heavy aluminum or stainless steel skillet without non-stick coating, it should work fine.

Walmart has them.  they use very thick metal.  I use mine camping all the time.  It took the seasoning very well
