Home today for lunch and put together some odds and ends and did it turn out GREAT !
tomato Au gratin ( this is simply cherry tomatoes - halved, mixed up with dash sugar, olive oil salt, pepper, oregano, panko and parm cheese - baked in a pan until tomatoes are soft and crumbs are brown and toasty. )
I heated up the tomato under the broiler to crisp it up. I heated the pasta and some cubed up cream cheese, added the diced / smoosed avocado and topped with the tomato gratin. Added a bit of Greek Dressing because it needed some acid.
