Gyudon, one of DH's favorites. It's sauteed onions and beef, seasoned with soy sauce and sugar, then simmered in dashi for a while (20 min.?) and served over rice.  A nice hearty dinner on a chilly night.

*whimper!* Ohhh, I miss gyuudon! I went to Yoshinoya at least once a week when I was spending my uni year in Japan. We had a Japanese festival here recently (celebrating Canberra's sister city relationship with Nara) and I spent about forty minutes in line and paid $10 for a small bowl of gyuudon.

I baked chunks of eggplant, black beans and tomatoes for a long time with some thyme and fennel, and served in whole wheat wraps with hummus, and served applesauce with cinnamon on the side. Great as leftovers for lunch today, too!

Roast chicken with roast potatoes and carrots. Parboil potatoes and pop it all in the oven: easy and delicious.
