For girls' night we had beet hummus with veggies, seared salmon with lemon garlic caper sauce, roasted butternut squash and beets in a browned butter sage sauce with blood orange and honey, layered pudding of chocolate and orange tapioca, wine and a little espresso. It's really fun being friends with foodies: we all confessed to making up a new recipe at the last minute tonight and we all geeked out about the flavor combinations the others came up with.

Going out of town today, so I cooked a bunch yesterday,  starting with vegan biscuits and gravy, curry veggie patties and asparagus for lunch,  and lentil-carrot curry for dinner, with vinho verde.

Linguine with red clam sauce.  This is a quick recipe and really good.

heat up 2 TBSP olive oil, dried basil, oregano, hot pepper flakes and a TBSP of garlic in sautee pan.  if you have white wine add a sploosh of that, or a bit of lemon juice ( or skip )

Add 2 cans chopped diced tomatoes with juice.  Simmer about 5 minutes

Add one can chopped clams drained and one can chopped clams with juice.

Add 1/2 lb of shrimp ( doesn't matter if cooked or uncooked, just shell and chop )

Add 1/4 cup of sliced black olives.  Simmer another 5 minutes.  Taste and adjust seasonings ( I like mine spicy ).  Serve over angel hair pasta.

This goes together in no time ! and its very ggod for using canned clams.

We had leftover buffet, lots of pasta with marinara and roasted mushrooms, Italian sausage to be added if desired, chicken tortilla soup and cereal.

Tonight will be a smoked pork butt, macaroni and cheese and home fries. Homemade burgers with bacon, served with baked tator tots and vegetable slaw.

Last night was soft boiled eggs with toast soldiers, salad and petit fours. Tonight I'm eating out so who knows.

I was inspired by Outdoor Girl's thread about parsnips in the Recipes folder, and had roasted root vegetables - parsnips, carrots, rose potatoes, and red onion. This was my first taste of parsnips, and I found a new vegetable I like (huge deal for me!). I actually paired it with tilapia, which balanced out the heavy veggies nicely.
