I got a box of Kraft Mac N Cheese at the store the other day for $.85 - it's the kind with the powdered cheese mix - not the deluxe version - I'm thinking I'll eat that.  Or a salad.  I'll see how ambitious I feel in an hour or two.  Don't know what husband is going to have - he can't decide.

Making good use of leftovers this week,

Last night - Leftover Asian Soup broth - so I added rice , peas, cilantro and celery.  very good.

This am - I made sweet potato has with a leftover sweet potato - added peppers, onios, hot sauce and an egg.

Dinner - who knows.... I am in the mood for a hotdog on the grill.

I made 2 small pizzas from scratch for late lunch, so leftovers it is. Nice poofy but not doughy dough recipe (and it only takes 30 minutes start to finish, which is kind of a pizza miracle), topped with sweet onions, tomatoes, butternut squash (diced small), basil and oregano; cheese on mine and nutritional yeast on his.

"This crust is just like my mom used to make!" is a compliment in this case.

It's just the two of us for Easter.  We'll be having a ham slice with roast sweet potatoes, French cut string beans and a red wine raisin sauce.

Last night was seafood.

For Easter dinner, we are having a tomato and mozzarella salad with vinaigrette, green beans with onion, sauted squash and a Frenched pork loin roast with an apple and mustard glaze. MIL is making mashed potatoes.

Dessert will be miniature gluten free cheesecakes topped with strawberries.

Easter dinner here with DH and my mother:  baked ham, roast tenderloin, oven roast carrots, steamed broccoli, baked potatoes, sauteed onion.  And that answers "what's for dinner for the rest of the week?"

Well, for Easter dinner, I am making a beef roast (none of my children particularly like ham--they'll eat it first time, but not left-over ham), asparagus, carrots and dinner rolls.  And some mini-cheesecakes.
