Vegetable Side Dishes

HUNGARIAN BRUSSELS SPROUTS

pint of sprouts, cleaned and trimmed
1 medium onion, diced
4-5 strips bacon
1/3 cup very cold water
1 cup sour cream
plain bread crumbs
butter shavings

Cook sprouts in boiling water for 10 minutes or less (depending on size) and drain.  Brown bacon and onion in fry pan until bacon is crisp.  Drain off half of rendered fat, crumble bacon back into pan, add cold water to cool down pan.  Mix in sour cream, then mix in sprouts.  Place into baking dish, sprinkle on bread crumbs, and top with butter shavings.  Place in pre-heated 350-degree oven for 10-12 minutes and serve.

Best served with pork or beef.

Rachel's Asparagus

Asparagus with Lemon Butter

2 pounds fresh asparagus
1 orange, red, or yellow bell pepper
Pinenuts (pigoli)
1/4 cup butter
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1 tablespoon grated lemon rind
1/4 cup fresh lemon juice

Turn oven to broil and broil pepper till blackened and charred. Place in Ziploc bag and set aside for a few minutes. Then peel, seed, and chop. This gives it a delicious rich flavor. Cut into strips and set aside. Toast pinenuts lightly in skillet and set aside.
 Snap off tough ends of asparagus; remove scales with a vegetable peeler, if desired. (I always do)
Melt butter in a skillet; add asparagus, and sauté 3 minutes or until crisp-tender. Add salt and pepper; remove from heat. Toss with lemon rind and juice. Garnish with pinenuts and pepper strips.

Cellophane Noodle Salad.

This is a godsend on hot summer days.  It's tasty, refreshing and something a little different.  Best of all, there's no cooking required.

Cellophane noodles.  (1 nest makes about 2 servings)
Carrot, celery and green pepper shredded.

Soy sauce
White vinegar
Sesame oil
Hoi Sin

Microwave a roomy bowl of water for 1 minute.
Immerse noodles and let stand until they soften.
Mix soy, vinegar, sesame oil and Hoi Sin to taste. 
Add to noodles.  Add shredded vegetables and toss to mix.
Chill and serve cold.
